Culinary Corner: Celebrity’s Healthy Salmon Salad

Since March, our Culinary Corner has dished up bakes and breads galore, not to mention the odd cocktail or two. So, in the name of balance, here’s a healthy option straight from Celebrity Cruises Spa Cafe. It’s quick, easy and perfect for those working from home lunches if beans on toast is starting to wear a little thin…

INGREDIENTS

450g salmon fillet

15g chopped dill

15g lemon zest

2tbsp lemon juice

1tbsp. spring onions

30g Greek yoghurt

Olive oil for seasoning

Salt and pepper to taste

½ radish for garnish

Parsley to garnish

METHOD

Place salmon on a baking tray and season with salt, pepper and olive oil

Cook at 150°c until fully baked

Allow the salmon to cool and shred with a fork

Add lemon zest and juice, one tablespoon of olive oil, dill and chives

Stir through the Greek yoghurt

Portion the salmon salad into the centre of a plate, garnish with finely sliced radish and parsley

Serve with your favourite crackers
