The Bolsover #MeddySteadyCook competition has now closed. It’s fair to say we’ve seen some fantastic recipes sent in by our entrants, all of whom could give Ainsley Harriott a run for his money. Read on to discover the delicious Mediterranean-themed dishes for yourself.
Our competition explained
To quickly recap, we were offering the chance to win a two-night mini cruise for two people with P&O Cruises Britannia. Entrants had to create their best Mediterranean-themed recipe using at least three of the following ingredients:
– Mozzarella/feta cheese
– Olive oil
Those who entered then had to post their recipe on their respective blogs, including images or videos of the dish. They then needed to tweet their post @BolsoverCruise with #MeddySteadyCook.
These were the entries
First up was Andy’s Kitchen, he posted this rather delectable-looking ‘Spaghetti with Cornish Crab and Cherry Tomatoes’. A simple but definitely tasty recipe, the key to this being a success is the freshness of the white crab meat.
Islandbell’s recipe combined a number of classic Spanish and Cypriot ingredients to create this super ‘Halloumi, Lentil and Chorizo Salad’. Not only is this a tasty meal by itself, it also serves as a delightful accompaniment to fish, chicken and other barbequed meats.
Up next is iliketweet’s ‘Stuffed Sweet Potato Skins’ recipe. This scrumptious vegetarian dish combines the tang of the sweet potatoes with the creaminess of mozzarella and light cream cheese; creating a filling and shareable meal for two to three people.
Next up we have tea.toast.fashion’s entry; these must-have ‘Mediterranean Lamb Wraps’. Her recipe makes four of these meaty treats and has a little added kick for spice lovers, courtesy of the chorizo sausage and added chili.
This recipe for ‘Mediterranean Chicken’ from Stylingo is another straightforward, yet intensely flavoursome affair. Again we see the mixture of a tomato and pepper base with creamy mozzarella and fresh chicken breasts. A hearty meal for two, which goes great with some additional sweet potato fries.
The first of our proper fish dish entries comes from A July Dreamer. A staple of a Mediterranean diet, this recipe sees fried fillets of fresh fish (in this case trout) matched wonderfully with traditional vegetables. In this case it’s a mouth-watering selection of roasted tomatoes, peppers and onions.
The Girl in the Bowler Hat’s entry is a top choice for those looking to quickly cook up a filling feast. The ‘Mediterranean Pasta Dish’ is another great one for vegetarians out there too, combining tasty Spanish vegetables with a generous helping of fantastic feta cheese.
Healthy and full of flavour are just a few descriptions that befit The Myrabev Life’s ‘Mediterranean Chicken Pasta’. The trick with this is to oven bake the key ingredients before adding to the pasta later; the recipe also includes turmeric for a colourful kick.
Despite having the same title of ‘Mediterranean Chicken Pasta’ this meal from Jigsaw Parenting offers its own delicious twist on the dish. This sees a wide variety of vegetables from courgettes to sun-dried tomatoes mixed in with crumbly feta and rich cream.
Our final entry is Cassiefairy’s wholesome ‘Mediterranean Chicken and Bean Stew’. The recipe cooks enough for four people to enjoy a bowlful each and combines Spanish and Italian flavours. As the image shows, the stew is finished off perfectly with a complementary bowl of olives and a sharing garlic bread.
