We’ve had a good run but the time has come for lots of us to return to the office, which means one thing; quick and easy breakfasts are back in the game. Oceania’s energy-boosting blueberry and almond bowls are healthy, heavy on all those good nutrients and prepared before bed, so you can grab and go come morning. Mix it up with different garnishes; Oceania’s Corporate Executive Chef Franck Garanger – a competitive runner – likes his with sliced strawberries, coconut flakes, chopped pineapple and a sprinkle of granola.
INGREDIENTS
Serves 4
165g unsalted organic almonds, peeled and finely chopped
60ml cup fresh lemon juice
235ml fresh orange juice
235ml water
125g frozen blueberries
1 ¼ tablespoons maple syrup
2 tablespoons chia seeds
Garnish of your choice
DIRECTIONS
Add the lemon juice, water, maple syrup and fresh orange juice to a blender. Then add the frozen blueberries and chopped almonds. Blend for 30 seconds on full speed.
Place mix in a bowl and stir in the chia seeds. Refrigerate overnight. In the morning, simply divide among four bowls and top with your choice of garnish. Enjoy!
