To celebrate the launch of Oceania’s INCREDIBLE ‘Around the World in 180 Days’ 2023 world cruise, we’re rustling up the kind of breakfast you can expect to tuck into on the epic voyage of a lifetime (and let us tell you, that is not a term we throw around loosely – this is the real deal!)
Healthy and plant-based, this hearty, wholesome breakfast will give you the energy you need for a day of getting out there and seeing the world (or, you know, working from home…)
SERVES 4
INGREDIENTS
2 ripe bananas, peeled
350ml cashew, almond, soy or other plant-based milk
1.5tbsp maple syrup
64g oats
230g oats blended to flour (measure after blending)
2tsp baking powder
2tbsp vegetable oil for cooking
TO FINISH
125ml maple syrup
Seasonal fruit
Toasted pecans or walnuts
FOR THE PANCAKE MIX
In a bowl, mash the banana with a fork until pureed. Whisk in the cashew milk and maple syrup. Add oats and oat flour, finish adding the baking powder. Mix well and let rest for 15 minutes.
FRY THE PANCAKES
In a nonstick pan, add a little oil and spoon pancake mix into the pan to form 3-inch diameter pancakes. Sear over medium heat on both sides until cooked thoroughly and slightly browned.
PLATING
Cut up the seasonal fruit of your choosing. Place the pancakes on a plate and garnish with the fruit and toasted pecans. Drizzle maple syrup on top and serve.
