For the pizza dough:
1kg plain flour
About 500ml water
10g fresh yeast
20g table salt
Mix all ingredients together.
MSC Pizza Pro tip: Pizza dough needs lots of rest but should not be over-proved, so prepare the dough early in the morning (or the night before for even more flavourful dough). Divide the dough in 200g lumps and let them rest in the fridge. Before using them, keep them at room temperature to make the proving process start slowly.
For the perfect pizza Margherita, top your homemade dough with:
tomato sauce
fresh mozzarella cheese
extra virgin olive oil
some fresh basil leaves.
