Fred. Olsen Cruise Lines is set to elevate its culinary offering with the introduction of a brand-new open-air dining venue aboard Borealis, and an exciting revamp of its fleet-wide speciality restaurants, starting in 2026.
Launching this November on Borealis following her scheduled October dry dock, Fresco will bring a fresh, alfresco dining experience to the aft of Deck 8. Designed to offer a laid-back, sun-soaked atmosphere, Fresco will serve light bites inspired by Mediterranean flavours, perfect for guests looking to enjoy relaxed dining with ocean views.
Looking further ahead, Fred. Olsen is also set to change the offering at its popular Colours and Tastes restaurant across the fleet. Starting in 2026, guests will be able to enjoy a more diverse range of dishes, with the addition of Gourmet Grill and Traditional Italian cuisine to complement the existing Asian-fusion favourites.
Also launching from 2026 is a new Chef’s Table experience, priced from £100 per person. This exclusive culinary journey will feature a multi-course tasting menu expertly prepared by Fred. Olsen’s top chefs and paired with hand-selected premium wines chosen by the onboard sommeliers. Ideal for food lovers and special celebrations, it’s set to be a standout highlight of any cruise.
