During the evening, The Colonnade becomes a lively spot serving up regionally themed dinners with full table service.

Caviar in the Surf is another signature Seabourn dining experience. The dress code for Seabourn Encore is casual, resort-style attire for the day, including shorts and jeans. In the evening (after 6pm) there are two different dress codes; Elegant Casual and Formal. Elegant casual dress is standard for all dining venues. Men can wear trousers, collared shirts and jumpers, while ladies may wear trousers, skirts, blouses or dresses. Formal attire is required in The Restaurant and men are asked to wear a tuxedo, suit or trousers and a jacket. Ladies may wear evening gowns or cocktail attire.
