Seabourn Launches New Alaska Culinary Programme for 2026 Season

Seabourn has unveiled a new destination-inspired culinary programme designed exclusively for its 2026 Alaska season, bringing regional flavours, locally sourced ingredients and immersive dining experiences to guests sailing aboard Seabourn Encore.

The luxury cruise line introduced the new programme as Seabourn Encore began its inaugural Alaska season in May 2026. The initiative expands Seabourn’s focus on regionally inspired cuisine, incorporating Alaska’s seafood, culinary traditions and cultural influences throughout each voyage.

Alaska-Inspired Dining Experiences at Sea

The new culinary programme features a range of themed dining experiences across Seabourn Encore’s restaurants and outdoor spaces.

Among the highlights is the Surf & Sear Sailaway, an Alaska-exclusive first-night dinner served in The Colonnade featuring dishes such as Weathervane scallops and chilled Alaskan crab.

Another standout experience is the Alaskan Seafood Boil, where guests are served individual pots filled with king crab legs, Alaskan salmon, mussels, shrimp and bacon-wrapped scallops in a more casual, interactive setting.

The programme also includes:

• Fisherman’s Table shared dining experiences during scenic cruising
• Midnight Sun Dinner menus inspired by Alaska’s landscapes and ingredients
• Alaska-themed Earth & Ocean evenings
• An elevated Alaskan brunch served during glacier viewing days
• Traditional Alaskan fish and chips lunches using sustainably sourced seafood

Collaboration with Alaskan Artist Crystal Worl

Seabourn has also partnered with Alaskan Native artist Crystal Worl as part of the new programme.

Worl created custom artwork for the Midnight Sun Dinner menus, helping bring an additional layer of cultural storytelling to the onboard experience. Her work explores themes of Indigenous identity, nature and place, further connecting guests to Alaska’s heritage.

New Alaska-Inspired Cocktails and Drinks

Alongside the dining programme, Seabourn has launched a collection of Alaska-inspired cocktails and local beers for the season.

Five signature cocktails have been created exclusively for Seabourn Encore’s Alaska voyages, including:

• Glacier & Fir
• Midnight Sun No. 20
• Denali Bramble
• Inside Passage Punch
• Aleutian Sunset

The drinks incorporate regional flavours and glacial ice, continuing the destination-focused approach throughout the onboard experience.

Outdoor Dining and Scenic Experiences

Weather permitting, Seabourn will also host outdoor culinary events on deck during scenic cruising.

These include caviar experiences, Glühwein and hot chocolate service, and salmon and corn chowder served against the backdrop of Alaska’s glaciers and fjords.

Seabourn Encore’s Alaska Season

Seabourn Encore officially began its 2026 Alaska season on 14 May 2026 with its maiden arrival in Vancouver. Between May and September, the ship will operate seven- to 14-day voyages between Vancouver and Juneau.

The itineraries feature a mix of iconic destinations such as Juneau and Ketchikan alongside lesser-visited locations including Alert Bay and the Inian Islands. Every voyage includes glacier viewing opportunities, with Seabourn stating that it offers more visits to Glacier Bay National Park than any other luxury cruise line.

Guests sailing on Seabourn Encore’s Alaska voyages will also benefit from an onboard Expedition Team and optional Ventures by Seabourn excursions including Zodiac cruises, kayaking and guided hikes.
