Seabourn is taking its destination-inspired dining to a new level with the introduction of Earth & Ocean, a culinary philosophy that will influence menus and food experiences across its fleet.
Building on the success of the Earth & Ocean restaurant, first introduced in 2018, the new approach will bring more regional flavours, locally sourced ingredients and culinary experiences to guests both on board and ashore.
The idea is to create a closer connection between the destinations guests visit and the food they enjoy, combining local specialities with premium ingredients sourced from around the world.
One of the most noticeable changes will be in The Restaurant, where new ‘Chef’s Market Finds’ dishes will showcase ingredients and flavours from the cruise destinations in which each ship is sailing.
In Alaska, guests might enjoy fresh lingcod with buttered spinach, rocket and green apple, while voyages around Australia and New Zealand could feature pink snapper with truffled spaghetti squash. In Northern Europe, Arctic char with fingerling potatoes and lemon-butter caper sauce is among the regional dishes highlighted.
Menus will reflect local produce, seasonal availability and regional culinary traditions, while continuing to feature gourmet ingredients selected for their quality.
Over the next year, Seabourn will expand Earth & Ocean beyond its restaurants, introducing additional opportunities for guests to discover the food cultures of the places they visit.
Plans include chef-led experiences, visits to local markets and new culinary activities designed to bring regional traditions to life.
On board, guests can also look forward to regional seafood boils, scenic cruising brunches inspired by the destinations being explored, refreshed Patio menus, fresh pasta and an enhanced caviar programme.
These additions will be introduced across the fleet, giving guests more opportunities to discover local flavours throughout their voyage.
A central theme of Earth & Ocean is the relationship between food and its place of origin.
Seabourn is drawing on the concepts of ‘terroir’, traditionally associated with the influence of land and climate on food and wine, and ‘merroir’, which describes how marine environments influence the character of seafood.
In Alaska, for example, the region’s cold, mineral-rich waters contribute to the character of its seafood, while Mediterranean menus may reflect the area’s olive-growing traditions, regional wines and coastal cuisine.
By incorporating these influences into its dining experiences, Seabourn hopes to give guests another way to understand and appreciate the destinations they explore.
